Another Daniel Fast Recipe Idea!

Ron and I were craving something like a burrito for dinner tonight.  We talked through some ideas and came up with the idea of a veggie burrito.  Some resources we've seen indicate that whole wheat tortillas are acceptable on the Daniel Fast, but they also indicate that yeast is not acceptable.  Herein lies the problem.  When we were at Harris Teeter tonight, we were examining the ingredients of their whole wheat tortillas.  Guess what?  They were whole wheat alright, but they contained yeast.  They also contained other ingredients which I knew weren't acceptable on the fast.  So, we wandered around and finished our shopping, returning home with no tortillas.  I'm sure this isn't a totally original idea, but tonight we had Tortilla-less Veggie Burritos.  They were VERY good.  The recipe follows the pictures, but you really can easily tailor this recipe to whatever suits your family's taste-buds!

Tortilla-less Veggie Burrito

Chop up green, red and yellow bell peppers
Chop up one purple onion
Season the veggies to your liking
Put on the grill for a few minutes (we used our indoor grill)
Remove from grill and place in skillet
Add chopped up zucchini
Stir-fry the veggies together in the skillet until they are tender
Cook whole grain brown rice
Serve the veggies over the rice
Top with salsa of your choosing (we used Newman's Own Mild Pineapple Salsa)
If you like, top with some heated organic refried beans
